Seared Lamb Chops with Passion Sauce recipe
Lamb chops and fruit make for a divinely simple and robust Valentine's Day entrée.
Ingredients:
2 tablespoons butter, divided
4 small lamb chops, trimmed
2 cloves garlic, minced
1 tablespoon minced fresh rosemary or thyme
¼ cup passionfruit liquor or syrup
Salt and black pepper, to taste
Preparation Instructions:
1) Melt 1 tablespoon butter in a large skillet over medium-high. Add chops and cook until browned on one side, about 5 minutes; turn and cook until browned on other side, about 4 minutes.
2) Add remaining 1 tablespoon butter, garlic, and rosemary to skillet; cook until chops are done to liking, turning every 3 minutes, about 5 to 8 more minutes total. Remove chops from skillet; set aside and cover.
3) Add passionfruit liquor to skillet; bring to a boil over high heat. Simmer until just thickened, about 2 minutes; season to taste. Pour over chops and serve.
