Cranberry Cream Scones recipe
Serve these fresh cranberry scones right out of the oventhere's nothing quite like butter and jam melting over a warm biscuit.
Ingredients:
2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1/3 cup butter, softened
1 cup chopped fresh cranberries
2 eggs
½ cup cream
1 teaspoon fresh orange zest
Crème fraiche, for serving
Fruit jam, for serving
Preparation Instructions:
1) Preheat oven to 375°F. Line a baking sheet with parchment paper.
2) In a large bowl, sift together flour, sugar, and baking powder. Cut in butter until mixture resembles coarse cornmeal. Stir in cranberries. In a separate medium bowl, whisk together eggs, cream, and zest. Add to flour mixture and mix until just combined.
3) Roll dough onto a lightly floured surface; knead gently 5 times and form into an 8-inch round disc. Use a heart-shaped cookie cutter to cut out 8 to 10 heart shapes.
4) Place on prepared baking sheet. Bake 12 to 15 minutes, until lightly browned and cracked on top. Serve warm or cool with crème and jam.
