Cod with Grapes and Champagne recipe
Grapes and champagne transform already delicious cod into a simply unforgettable entrée.
Ingredients:
2 (6-ounce) cod fillets, rinsed, patted dry
Salt and black pepper, to taste
1 cup champagne
1 tablespoon fresh tarragon leaves
¼ cup whipping cream
¼ pound seedless red or green grapes, halved
Preparation Instructions:
1) Preheat oven to 350°F. Lightly grease a shallow baking dish and a piece of foil just large enough to cover the dish.
2) Lay cod fillets in the dish, folding the thin tails ends under for even thickness. Season with salt and pepper.
3) In a small saucepan, combine champagne and tarragon; bring to a boil over high heat and simmer 1 minute. Pour over the fish fillets; cover with greased foil. Bake until fillets flake easily, about 5 minutes per inch thickness.
4) Using a spatula, carefully remove fillets from pan; transfer to baking towels to dry. Cover with foil.
5) Pour pan juices back into small saucepan; add cream and grapes and bring to a boil over medium-high. Simmer until sauce is just thick enough to coat the back of a spoon, about 4 minutes. Pour over fillets and serve.
