Cherry Pecan Tartlets recipe
No need to bake a whole tartenjoy mini-tarts as bite-size dessert nibbles.
Ingredients:
1 cup butter, softened
½ cup plus 3 tablespoons sugar, divided
5 egg yolks, lightly beaten
2 cups all-purpose flour
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
2 egg whites, lightly beaten
¼ cup ground pecans
1 ½ cup cherry jam
Preparation Instructions:
1) In a large bowl, cream butter until fluffy; add ½ cup sugar and beat. Add egg yolks and beat well. Add flour, vanilla, and cinnamon; beat until a dough forms. Wrap in plastic to cover; chill 30 minutes.
2) Preheat oven to 350°F.
3) Roll dough out onto a lightly floured surface to 1/8-inch thickness. Use heart-shaped cookie cutters to cut about 10 shapes for bottoms; use a smaller heart-shaped cutter to cut out about 10 shaped for tops.
4) Brush tops with egg whites; sprinkle tops with remaining 3 tablespoons sugar and pecans. Place all shapes on an ungreased baking sheet; bake 10 minutes. Cool 10 minutes. Spread bottoms with a thin layer of jam; gently press top layer on. Cool completely and serve.
