Champagne Shrimp and Pasta recipe
Champagne isn't just for drinkingit creates that extra level of spark and shine in our divine shrimp pasta entree.
Ingredients:
½ pound angel hair pasta
1 tablespoon extra-virgin olive oil
1 cup sliced mushrooms
1 pound shrimp, peeled, deveined
2 cups champagne or sparkling wine
2 tablespoons minced shallot
1 cup heavy cream
3 tablespoons chopped fresh parsley
Salt and black pepper, to taste
Freshly grated Parmesan cheese
Preparation Instructions:
1) Cook pasta according to package directions; drain and set aside.
2) Heat oil in a large skillet over medium-high; add mushrooms and cook until softened, about 5 minutes. Remove from skillet; set aside.
3) Add shrimp and champagne to skillet; bring to a boil over high heat. Remove shrimp; set aside.
4) Add shallots to skillet; simmer 8 minutes, until softened and liquid is reduced.
5) Add cream to skillet; simmer 2 minutes, stirring occasionally. Add reserved mushrooms and shrimp, along with parsley and salt and pepper to taste. Spoon shrimp mixture over reserved pasta; top with cheese.
